Herbed Squash with Apple
Serves: 4-6
Ingredients:
1 pound (500 g) baby squash, trimmed and sliced
1 large Granny Smith apple, peeled and sliced
1 teaspoon lemon juice
1 teaspoon freshly grated ginger
2 teaspoons freshly chopped herbs
Microwave Method:
1. Place squash into a 8 inch (20 cm) flan dish. Cover and cook for 3-4 minutes on HIGH.
2. Stir in apple, lemon juice and ginger. Cover, and cook a further 2-3 minutes on HIGH.
3. Allow to stand for 2-3 minutes.
4. Stir in herbs and serve.
This recipe contains no fat.
