Spring Cauliflower

Ingredients:

8 ounces (250 g) cauliflower, cut into florets
1/2 cup sour cream
2 tablespoons French onion soup mix

Microwave Method:

1. Place cauliflower into a small flan dish.
2. Cover with plastic wrap. Cook for 3-4 minutes on HIGH.
3. Mix sour cream with 1 tablespoon French onion soup mix. Spread over cauliflower.
4. Sprinkle with remaining tablespoon of French onion soup mix.
5. Cook, uncovered for 2-3 minutes on HIGH.
6. Serve immediately as a vegetable accompaniment.

Spaghetti Alla Matriciana

Ingredients:

4 ounces (125 g) spaghetti
3 cups boiling water
2 rashers bacon, chopped
1/2 small onion, chopped
Pinch cayenne pepper
2 large tomatoes, chopped
2 tablespoons tomato paste
1/4 cup chicken stock
Bay leaf
1/2 cup freshly grated Parmesan cheese

Microwave Method:

1. Place spaghetti into a large bowl with water. Cook for 10-12 minutes on HIGH.
2. Place bacon, onion and cayenne pepper into a bowl. Cook for 2-3 minutes on HIGH, stirring halfway through cooking.
3. Stir in tomatoes, tomato paste, stock and bay leaf. Cook for 8-10 minutes on HIGH, stirring twice during cooking.
4. Remove bay leaf. Pour over drained pasta.
5. Sprinkle with cheese.

Sausages with Peanut Sauce

Ingredients:

4 thick sausages
1/2 onion, chopped
1 tablespoon oil
1 teaspoon grated ginger
1 clove garlic, crushed
1/4 teaspoon chili powder
1/4 teaspoon cumin powder
1/4 cup peanut butter
1/2 cup coconut milk

Microwave Method:

1. Place sausages on a roasting rack. Pierce skins with a fork.
2. Cook for 4-6 minutes on MEDIUM HIGH, turning over halfway through cooking.
3. Place onion, oil, ginger and garlic in a small bowl. Cook for 2-4 minutes on HIGH, stirring halfway through cooking.
4. Stir in chili, cumin, peanut butter and coconut milk.
5. Cook for 2-3 minutes on HIGH, stirring during cooking.
6. Pour sauce over sausages.
7. Serve with rice or pasta.

Lemon and Herb Salmon Fillets

Ingredients:

Grated rind 1 lemon
1/4 cup lemon juice
2 teaspoons seeded mustard
Freshly cracked black pepper
2 salmon fillets (approx. 4 ounces/125 g each)

Microwave Method:

1. Combine lemon rind, juice, seeded mustard and pepper. Mix well.
2. Marinate fillets for 2-3 hours, turning over once.
3. Place fillets onto a roasting rack and cook for 10-12 minutes on MEDIUM.
4. Serve with fresh salad.

Convection Microwave Method:

1. Combine lemon rind, juice, seeded mustard and pepper. Mix well.
2. Marinate fillets for 2-3 hours, turning over once.
3. Place fillets into a greased pizza tray.
4. Place on High Rack. Cook for 18-20 minutes on GRILL. (Oven will automatically preheat to 500 degrees F (250 degrees C.)
5. Serve with fresh salad.

Meal In One

Ingredients:

1/2 cup rice
1 1/2 cups chicken stock
1/4 teaspoon turmeric
Season All salt
2 chicken breasts, finely shredded
1 cup assorted vegetables (carrot, zucchini, mushrooms and onion)

Microwave Method:

1. Wash rice until water runs clear.
2. Place rice, stock, turmeric and Season All salt in a 2 quart (litre) bowl.
3. Cook, uncovered for 8-9 minutes on HIGH.
4. Stir in chicken. Cook covered for 4-5 minutes on MEDIUM HIGH.
5. Stir in vegetables. Cook covered for 4-5 minutes on MEDIUM HIGH.

Crispy Lemon Chicken

Ingredients:

1/4 cup hoi sin sauce
1/3 cup lemon juice
1 teaspoon grated lemon rind
2 chicken Marylands

Microwave Method:

1. Combine hot sin sauce, lemon juice and rind.
2. Pour over chicken, marinate for 3-4 hours.
3. Place chicken onto a microwave roasting rack.
4. Cook for 18-22 minutes on MEDIUM HIGH. Turn over halfway through cooking and baste with marinade.

Convection Microwave Method:

1. Combine hot sin sauce, lemon juice and rind.
2. Pour over chicken, marinate for 3-4 hours.
3. Preheat oven to 350 degrees F (180 degrees C).
4. Place chicken on Low Rack, cook for 18-22 minutes on HIGH MIX/ROAST.
