Tomato and Carrot Soup

Serves: 4-6

Ingredients:

2/3 ounce (20 g) butter
1 pound (500 g) carrots, peeled and sliced
1 onion, chopped
1 medium-size potato, peeled and diced
1 1/2 cups warm chicken stock
1 teaspoon sugar
5.5 fl oz (170 ml) can tomato juice
1-2 tablespoons tomato paste
1 cup cream
Pinch nutmeg
Salt and pepper to taste
Chopped parsley or chives

Microwave Method:

1. Melt butter in a large bowl for 50 seconds on HIGH.
2. Add carrots, onions and potato. Mix well and cook for 5-6 minutes on HIGH.
3. Add stock and sugar. Stir, cover and cook for 10-12 minutes on HIGH. Puree.
4. Stir in tomato juice and tomato paste. Cook for 1 minute on HIGH.
5. Stir in cream, nutmeg, salt and pepper. Heat for 1 minute on HIGH.
6. Serve hot, sprinkled with parsley or chives.

Quick and Easy Pizza

Serves: 1-2

Ingredients:

1 Lebanese bread
1-2 teaspoons tomato paste
1 clove garlic, chopped finely
Black pepper, to taste
1 small onion, cut into thin strips
1/2 small pepper (capsicum), sliced
2-3 button mushrooms, sliced
1-2 slices ham, chopped
1/3 of 14 ounce (450 g) can of pineapple pieces
1/2 cup grated Mozzarella cheese
1/2-1 teaspoon dried oregano leaves

Microwave Method:

1. Spread one side of bread entirely with tomato paste.
2. Place remaining ingredients on top, finishing with cheese and oregano.
3. Place on a roasting rack and cook for 3-4 minutes on MEDIUM HIGH.

Convection Microwave Method:

1. Preheat convection oven to 400 degrees F (200 degrees C).
2. Spread one side of bread entirely with tomato paste.
3. Place remaining ingredients on top, finishing with cheese and oregano.
4. Place on High Rack and cook for 8-10 minutes on CONVECTION.

Optional Toppings:

Black olives
Anchovies
Salami
Pepperoni
Cabanosi
Sun-dried tomatoes

Glazed Corned Lamb


Serves: 4-6

Ingredients:

4 pound (2 kg) corned leg of lamb
1 orange, cut into wedges
2 bacon bones, optional
2 tablespoons brown vinegar
Whole cloves
1 onion, sliced
3 tablespoons brown sugar

Microwave Method:

1. Rinse meat in cold water. Place in a large casserole dish.
2. Add remaining ingredients, except brown sugar. Cover with hot tap water.
3. Cook for 70-80 minutes on MEDIUM.
4. Sprinkle with brown sugar. Cook a further 5-7 minutes on MEDIUM.
5. Serve hot or cold.

Convection Microwave Method:

1. Rinse meat in cold water. Place in a large casserole dish.
2. Add remaining ingredients, except brown sugar. Cover with hot tap water.
3. Cook on Low Rack for 4 hours on SLOW COOK (CONVECTION 275 degrees F/130 degrees C).
4. Sprinkle with brown sugar. Cook a further 10 minutes on CONVECTION.
5. Serve hot or cold.

Sweet Curried Chicken Pieces


Serves: 4

Ingredients:

4 chicken Marylands
2 ounces (60 g) button mushrooms, sliced
Sauce:
3 ounces (90 g) butter
3/4 cup honey
1 teaspoon grated ginger
1 clove garlic, crushed
2 tablespoons dry mustard
1 tablespoon curry powder
Salt and pepper to taste

Microwave Method:

1. Melt butter for 50 seconds on HIGH. Combine remaining sauce ingredients with butter.
2. Place chicken on a roasting rack. Cook for 15-16 minutes on MEDIUM HIGH, turning over halfway through cooking.
3. Combine chicken and sauce in a casserole dish.
4. Cook a further 15-20 minutes on MEDIUM HIGH, stir in mushrooms for 5 minutes before the end of cooking.

Convection Microwave Method:

1. Melt butter for 50 seconds on HIGH.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Combine remaining sauce ingredients with butter. Mix well.
4. Place chicken on Low Rack and cook for 20-22 minutes on HIGH MIX/ROAST, turning chicken over halfway through cooking.
5. Combine chicken and sauce in a casserole dish.
6. Cook a further 10 minutes, uncovered, on HIGH MIX/ROAST.
7. Add mushrooms and cook a further 5 minutes on HIGH MIX/ROAST.

Italian Zucchini

Serves: 4

Ingredients:

4 medium zucchini, thinly sliced
1 tablespoon butter
1 tablespoon olive oil
2 teaspoons finely chopped parsley
1/2 teaspoon dried basil leaves
1/2 teaspoon oregano leaves

Microwave Method:

1. Place zucchini in 1 quart (litre) casserole dish, add 1 tablespoon water, cover. Cook for 2 minutes on HIGH.
2. Stir in remaining ingredients. Cook for a further 2 minutes, stirring once during cooking.

Mushroom Magic


Serves: 4

Ingredients:

11 ounce (340 g) can asparagus spears
8 large flat mushrooms, stalks removed
1 avocado
Juice of 1 lemon
1/4 teaspoon Tabasco
1/4 cup grated cheese

Microwave Method:

1. Arrange two asparagus spears over each mushroom.
2. Finely chop remaining asparagus.
3. Mash avocado, add lemon juice and Tabasco. Mix with asparagus.
4. Place a large spoonful of avocado mixture over asparagus. Sprinkle with grated cheese.
5. Place on a plate, cook for 2-3 minutes on HIGH.
6. Brown under a grill if desired.

Convection Microwave Method:

1. Preheat oven to 500 degrees F (250 degrees C).
2. Arrange two asparagus spears over each mushroom.
3. Finely chop remaining asparagus.
4. Mash avocado, add lemon juice and Tabasco. Mix with asparagus.
5. Place a large spoonful of avocado mixture over asparagus. Sprinkle with grated cheese.
6. Place on pizza tray on High Rack and GRILL for 5 minutes.
