Creamy Stuffed Potatoes

Serves: 4

Ingredients:

2 large washed potatoes (7 ounces/220 g each)
1/4 cup fat-reduced mayonnaise
2 spring onions (shallots), finely chopped
1 teaspoon seeded mustard
Paprika

Microwave Method:

1. Pierce potatoes with a fork on each side.
2. Place on turntable, cook for 5-7 minutes on HIGH, turning over halfway through cooking.
3. Wrap each potato in foil. Allow to stand for 4-5 minutes.
4. Combine mayonnaise, spring onions and mustard.
5. Cut each potato in half, scoop out flesh, leaving a shell. Mix with mayonnaise.
6. Spoon filling back into shells.
7. Sprinkle with paprika.
8. Place on a dinner plate, cook for 2-3 minutes on HIGH.
9. Serve hot as a vegetable accompaniment.

Convection Microwave Method:

1. Place potatoes on turntable, cook for 17-19 minutes on HIGH MIX/ROAST, turning over halfway through cooking.
2. Combine mayonnaise, spring onions and mustard.
3. Cut each potato in half, scoop out flesh, leaving a shell. Mix with mayonnaise.
4. Place potato shell onto Low Rack, cook for 5-7 minutes on HIGH MIX/ROAST (400 degrees F/200 degrees C).
5. Spoon filling back into shells.
6. Sprinkle with paprika.
7. Place on Low Rack, cook for 5-7 minutes on HIGH MIX/ROAST (400 degrees F/200 degrees C).
8. Serve hot as a vegetable accompaniment.

1 serve = 3 g fat, no saturated fat.

Mandarin Sauce


Makes: 3 cups

Ingredients:

6 mandarins, peeled
1/2 cup Cointreau
1 1/2 cups water
1/4 cup caster sugar
3 tablespoons white vinegar
2 tablespoons cornflour
2 tablespoons water, extra

Microwave Method:

1. Combine mandarins, Cointreau and 1/2 cup water in a 1 quart (litre) bowl.
2. Cover and cook for 7-8 minutes on HIGH.
3. Place into a food processor. Blend until smooth.
4. Pour through a sieve, reserving juice.
5. Combine sugar and vinegar in a Pyrex jug. Cook for 4-6 minutes on HIGH, stirring every minute, until golden brown.
6. Add reserved mandarin juice and remaining water.
7. Combine cornflour and extra water together. Pour into sauce.
8. Cook for 3-5 minutes on HIGH, stirring halfway through cooking.
9. Serve warm over Roast Duck or Roast Chicken.

This recipe contains no fat.

Octopus Salad


Serves: 4-6

Ingredients:

2 pound (1 kg) octopus
2 cups tomato juice
1/2 cup red wine
1 tablespoon Worcestershire sauce
Tabasco sauce
6 pitted black olives, sliced
1 cup bean sprouts
1 avocado, thickly chopped
8 ounces/250 g/1 punnet cherry tomatoes, halved
Sauce:
1/4 cup fat-reduced mayonnaise
2 tablespoons tomato ketchup (sauce)
1 tablespoon Worcestershire sauce
Tabasco sauce
Freshly cracked black pepper

Microwave Method:

1. Cut heads from octopus. Wash well.
2. Combine octopus, tomato juice, red wine, Worcestershire sauce and Tabasco sauce in a Pyrex bowl.
3. Cook, uncovered, for 18-20 minutes on MEDIUM, stirring twice during cooking. Chill for 1-2 hours.
4. Combine octopus, olives, bean sprouts, avocado and cherry tomatoes.
5. Gently fold through sauce.

Sauce:

1. Combine mayonnaise, tomato ketchup and Worcestershire sauce.
2. Stir in Tabasco sauce and pepper to taste.

1 serve = 13 g fat, 3 g saturated fat.

High-Fiber Soup

Serves: 6-8

Ingredients:

1 cup dried Lima beans
2 cups water
1 leek, sliced and washed
2 tablespoons safflower oil
2 cloves garlic, crushed
2 sticks celery, sliced
1 carrot, finely chopped
1 parsnip, finely chopped
2 potatoes, unpeeled and cubed
5 cups chicken stock
4 tomatoes, chopped
Freshly ground pepper

Microwave Method:

1. Place Lima beans and water in a large bowl. Cover and cook for 5 minutes on HIGH, then 22-28 minutes on MEDIUM, until tender. Drain and set aside.
2. Place leek, oil, garlic and celery into a 5 quart (litre) bowl. Cook for 3-5 minutes on HIGH, stirring halfway through cooking.
3. Stir in carrot, parsnip, potatoes and chicken stock. Cover and cook for 18-20 minutes on HIGH.
4. Stir in tomatoes and Lima beans.
5. Cover and cook for 18-20 minutes on HIGH, stirring twice during cooking.
6. Season with freshly ground pepper.

1 serve = 6 g fat, 1 g saturated fat.

Brown Rice and Vegetable Risotto

Serves: 4-6

Ingredients:

1 cup brown rice
3 cups chicken stock
1 tablespoon olive oil
1 onion, finely chopped
1 clove garlic, crushed
1 teaspoon grated ginger
1/2 teaspoon ground cumin
1 teaspoon chili powder
1 carrot, sliced
5 ounces (150 g) broccoli florets
1/4 small cabbage, finely shredded
1 cup frozen peas
1 green pepper (capsicum), cubed
1 red pepper (capsicum), cubed
5 ounces (150 g) mushrooms, sliced
1 pound king prawns, peeled, vein removed and chopped (optional)

Microwave Method:

1. Place rice and chicken stock into a 2 quart (litre) bowl.
2. Cook for 30-35 minutes on HIGH, until tender. Stir halfway through cooking.
3. Place oil, onion, garlic, ginger, cumin and chili powder into a large shallow dish.
4. Cook for 2-3 minutes on HIGH.
5. Add carrots. Cook for 2-3 minutes on HIGH.
6. Stir in broccoli, cabbage and peas. Cook for 4-6 minutes on HIGH, stirring halfway through cooking.
7. Stir in remaining ingredients. Cook 8-10 minutes on MEDIUM HIGH.

1 serve = 5 g fat, 1 g saturated fat.

Curried Pocket Breads

Makes: 8

Ingredients:

1 sweet potato, peeled and cubed
2 tablespoons olive oil
1 small onion, chopped
2 tablespoons curry paste
2 tablespoons flour
1 cup water
10 ounce (310 g) can red kidney beans, drained
10 ounce (310 g) can corn kernels, drained
4 small pocket breads

Microwave Method:

1. Place potato in a small bowl. Cover with water and a lid. Cook for 7-9 minutes on HIGH, drain.
2. Place oil and onion into a bowl. Cook for 2-3 minutes on HIGH.
3. Stir in curry paste and flour. Cook for 30 seconds-1 minute on HIGH.
4. Gradually stir in water. Cook for 4-5 minutes on HIGH, stirring halfway through cooking.
5. Fold through kidney beans, corn and potato. Heat for 3-4 minutes on HIGH.
6. Place pocket bread on turntable. Heat for 30-50 seconds on HIGH.
7. Cut bread in half and spoon in filling.

Convection Microwave Method:

1. Place potato in a small bowl. Cover with water and a lid. Cook for 7-9 minutes on HIGH, drain.
2. Place oil and onion into a bowl. Cook for 2-3 minutes on HIGH.
3. Stir in curry paste and flour. Cook for 30 seconds-1 minute on HIGH.
4. Gradually stir in water. Cook for 4-5 minutes on HIGH, stirring halfway through cooking.
5. Fold through kidney beans, corn and potato. Heat for 3-4 minutes on HIGH.
6. Place pocket bread on he Low Rack and heat for 6-8 minutes on CONVECTION 400 degrees F/200 degrees C.
7. Cut bread in half and spoon in filling.

1 serve = 6 g fat, 1 g saturated fat.
